Dublin Coddle

Coddle was and still is, considered cheap and cheerful Irish comfort food. It is prepared quickly and is extremely tasty. Some would recommend adding some Irish Stout to it but not everyone agrees. We don’t add stout in this recipe but feel free to if you would like to.

Preparation time: 5 Minutes

Cooking time: 40 Minutes

Ingredients

Serves Four

450g pork sausages 225g streaky bacon 1kg potatoes
3 onions

450ml chicken stock 4 sprigs fresh parsley Salt and pepper

Method

  1. On a chopping board, peel the potatoes and onions.
  2. Chop the potatoes into quarters, dice the bacon, onion and chop the parsley finely.
  3. In a large sauce pan, add the stock and potatoes; bring to boil.
  4. Add the sausages, bacon and onions; boil for 5 minutes.
  5. Reduce and simmer for 35 minutes

    *Check after 30 minutes, adding more stock if necessary.

  6. Season to taste
  7. Serve with parsley
