Roasted Bell Peppers Stuffed with Garlic and Chicken

These stuffed peppers are easy peasy to make and are packed full of flavour. Bell peppers are a great starter and for me, this is one of my favourites and it looks extremely colourful as well as tasting amazing.

Ingredients

Serves Four

500g chicken breast meat 4 large red/green peppers 2 cloves garlic

1 onion
2 tbsp. olive oil
Salt and black pepper

Method

1. On a chopping board, chop the chicken into tiny pieces, (alternatively you could mince the chicken in a mincer). Chop the garlic and the onion into small pieces and add the mix into the chicken.

2. In a saucepan, add the olive oil and bring to a medium heat, add the chicken, and sweat for 2 to 3 minutes

3. Add the garlic and onion mix, to cook for 4 to 5 minutes.
4. Remove from heat and leave aside.
5. On a chopping board, cut the tops off the peppers and scoop out the inner seeds of the pepper ensuring you do not puncture the pepper. Fill the peppers with the cooked chicken mix and add the pepper tops.

6. Place the peppers onto a baking tray and place in a preheated oven at F350° / C180° / Gas Mark 4 for 15 Minutes.
