Turnip and Smoked Bacon Soup

Turnip is part of the nutritional powerhouse group of vegetable and it provides a lot of nutrients while being low in calories. The smoked bacon with the garlic creates a unique soup and it is unbelievably appetizing.

Cooking time: 35 Minutes

Ideal storage: Refrigerator 2 days / Freezer for 2 months

Ingredients

Serves Four

100g Irish butter
1 onion
2 cloves garlic
200g smoked bacon 800g turnip

1 litre vegetable stock (p247) 250ml cream
Salt and black pepper

Method

  1. On a chopping board, peel the turnip, onion and garlic. Dice the vegetables along with the bacon.
  2. In a large sauce pan, add the butter and bring to a low heat until softened, but not brown.
  3. Add the bacon and sweat for 4 minutes.
  4. Add the onion and garlic and sweat for a further 1 minute.
  5. Add the stock and the turnips.
  6. Bring to the boil and simmer for 30 minutes.
  7. Using a hand blender, blend until smooth
  8. Season to taste
