Turnip and Smoked Bacon Soup
Turnip is part of the nutritional powerhouse group of vegetable and it provides a lot of nutrients while being low in calories. The smoked bacon with the garlic creates a unique soup and it is unbelievably appetizing.

Ingredients
Serves Four
100g Irish butter
1 onion
2 cloves garlic
200g smoked bacon 800g turnip
1 litre vegetable stock (p247) 250ml cream
Salt and black pepper
Method
- On a chopping board, peel the turnip, onion and garlic. Dice the vegetables along with the bacon.
- In a large sauce pan, add the butter and bring to a low heat until softened, but not brown.
- Add the bacon and sweat for 4 minutes.
- Add the onion and garlic and sweat for a further 1 minute.
- Add the stock and the turnips.
- Bring to the boil and simmer for 30 minutes.
- Using a hand blender, blend until smooth
- Season to taste
